Bologna Food and Wine Tour, Bologna
The tour starts with a dairy which makes Parmigiano Reggiano, or Parmesan, considered the king of cheeses. Produced within a limited area that includes the provinces of Parma, Reggio Emilia, Modena, Bologna (west of the river Reno) and Mantova (east of the river Po). It is handmade by craftsmen using traditional methods. During our visit, we will see all the steps of producing the cheese and taste the results. Our next stop will be at a winery where we can visit the vineyards and taste 5 different wines as we get a bite for lunch. After lunch we will visit a maker of traditional balsamic vinegar. Known locally as black gold, this vinegar is produced from cooked grape juice and aged in wooden barrels for at least 12 years. The top vinegars must be at least 25 years old. Both types are protected under the European Protected Designation of Origin (PDO) system. The experienced local guide will tell you fascinating facts about these and other sights along the way.
