Founded in 2014 by master pizzaiolo Ciro Salvo, 50 Kalò quickly earned a reputation as one of the leading destinations for authentic Neapolitan pizza in Naples. Salvo, a third-generation pizza maker, built the restaurant around the traditions of classic Neapolitan pizza: soft, hand-stretched dough, wood-fired baking, and carefully selected ingredients such as San Marzano tomato, buffalo mozzarella, and fresh basil. The pizzeria’s name reflects its philosophy—“50” refers to dough or bread in Neapolitan dream symbolism, while “kalò,” derived from Greek, means good, together translating to “good dough.”

Unlike some traditional pizzerias that focus on a very limited menu, 50 Kalò offers a broad selection of pizzas that balance heritage with creativity. While rooted in the classic Neapolitan style, Salvo’s approach introduces modern combinations and high-quality ingredients sourced from local artisanal producers. Each pizza is baked for roughly 90 seconds in a wood-fired oven, creating the signature soft centre, airy crust, and lightly charred edge associated with authentic Neapolitan pizza.

Recognition came quickly after opening. In 2014, the restaurant was praised by The New York Times as one of the best places for pizza in Italy, and it later became one of the few Italian pizzerias included in the prestigious Michelin Guide. Today, 50 Kalò remains one of Naples’ most celebrated pizza destinations, attracting both locals and visitors who come to experience a refined yet deeply traditional interpretation of one of Italy’s most iconic dishes.
