Pat's King of Steaks, Philadelphia
Pat’s King of Steaks is a sandwich shop, all right, but metaphorically speaking, it is also a place where Philadelphia decided bread deserved a promotion. Opened in 1930 by the Olivieri brothers, Pasquale and Harry, this joint is widely credited with inventing the cheesesteak. These days, the grill is still in the family, run by Harry’s grandson, Frank—a vivid proof that some legacies are best served hot and wrapped in paper.
The origin story is equal parts hunger and curiosity. The brothers were in the hot-dog business when one day they decided to diversify their lunch offerings. So, Pat sent Harry off to grab some cheap steak. They sliced it thin, tossed it on the grill with onions, and let the aroma do the marketing. A passing cab driver caught a whiff, pulled over, and basically said, “I’ll have whatever that is.” They called it a steak sandwich. History—and cholesterol—did the rest...
By the time Rocky came along, Pat’s had already become a local legend, but the film gave it a cinematic glow. It’s the spot where Rocky Balboa grabs a bite with Tony Gazzo, and yes, there’s a plaque outside marking the moment Hollywood met melted cheese on November 21, 1975. Not a bad day’s work for a sandwich...
Now, ordering here is practically a performance. You don’t just ask politely—you commit. Pick your cheese—Whiz, provolone, American, or go plain—and then declare your onion preference like a local in the distinctive Philadelphia accent: “wit” or “wit-out.” Say it confidently, say it quickly, and whatever you do, don’t hesitate… this is not the place to workshop your order mid-sentence.
