La Palette has long served as both a neighborhood café and a quiet witness to Parisian creative life. The brasserie traces its modern identity to 1950, when it adopted its current name after being acquired by Jean Louis Hilbert in the interwar period. Its connection to nearby art institutions—especially the École des Beaux-Arts—quickly shaped its role as a gathering place for students and artists. This legacy was formally recognized in 1984, when its front window and back room were listed as historic monuments, preserving a slice of mid-century café culture in situ.

Inside, La Palette retains a layered, lived-in charm. The small bar room opens into a larger back space—once a billiard hall—decorated with ceramics from the 1930s and 1940s and an assortment of paintings that echo its artistic lineage. Over the decades, figures such as Paul Cézanne, Pablo Picasso, and Georges Braque were counted among its regulars, reinforcing its place within the cultural landscape of Paris.
